LELEA FRANCINE worlds famous spinach dip

1 10 onz. pkg. chopped spinach (thawed and squeezed dry)
1-1/2 cups sour cream
1 cup mayonnaise
1 pkg Knorr vegetable soup mix
8 onz can water chestnuts, chopped
3 chopped green onions.
Blend well Cover and refrigerate at least for 2 hours.
can substitute the soup for other brands or flavors.
red onions can be used

Coffee Caramel popcorn
8 cups popped popcorn
2 Tbs cider vinegar
1 cup cashews or peanuts
1 cup sugar, brown or white
3 Tbs butter
1/2 cup coffee liqueur (or strong coffee)
plus 2 Tbs sugar.
Keep popcorn warm in a low oven.
Heat coffee liqueur, sugar and vinegar to the boiling point stirring until sugar dissolved. add butter and boil to heart-crack stage (310*F.) Pour ever warm popcorn and and nuts stirring to coat evenly. Roast popcorn in an even shallow roasting pan in a 200* F oven for 30 minutes, stirring twice. keeps up to two weeks in an airtight container. Do not refrigerate. Makes 9 cups.

Spiced nuts

1 egg white
3/4 cup sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp water
1 tsp salt
1/2 tsp cloves
2 cups whole walnuts or pecans
Beat egg white stiff.Combine spices and sugar in a second bowl. Pour nuts into the beating egg whites, toss to coat. then pour nuts into spice mixture. Toss again. Stread in a greased cookie sheet, separating nuts. Toast in a 275*F oven for 30 minutes, Cool. Separate nuts if necessary. store up 1 mount in an airtight container.
